Rostislav Rebets' snail business in the Kiev region began with news – he read a publication about the export of snails from Ukraine and decided that it could become a profitable business. That is why in 2016, together with his father and friend Rostislav founded a snail farm in the Kiev region.

The new economy developed rapidly. By the start of the pandemic, the farm was exporting gastropods to Lithuania and France. After the borders were closed, Rostislav reoriented his business to the domestic market.


What are snails fed with?

Before placing the boards with snails on the field, the farmer sows it with rapeseed. This will be food for the gastropods. In the field, snails grow until mid-September. It is then that the time comes to "harvest".

The broodstock of mollusks live in special rooms – greenhouses, where a constant temperature, level of humidity, lighting is maintained and irrigation is applied. Here snails are fed with compound feed from seven cereals (wheat, corn, barley and others).


How to cook snails?

One of the classic recipes is Burgundy Stuffed Snail. The snails are boiled, taken out of the shell. Next, prepare the sauce - you need to mix the garlic, butter, parsley, leek. The snail meat is returned to the sink along with the sauce. The dish can be eaten immediately or frozen – it is in frozen form that shellfish are most often sold.
