Scientists from Germany have created a mushroom that tastes like strawberries
Their work will help create sustainable strawberry and strawberry flavors, according to the authors.
Holger Zorn University staff were able to grow a mushroom that smells and tastes like strawberries.
This was reported in the ACS magazine.
For example, experts used a tinder fungus, which is often used in the production of vanillin. As it turns out, the Wolfiporia cocos mushroom can produce the molecules that make up the smell of strawberries. To do this, mushrooms must be grown on biological mass from currant cake, and aspartic acid must also be added there.
As for the gustatory properties, the scientists have attracted a group of specialists who understand aromas and tastes at a professional level. After collectively tasting, they confirmed that the mushroom possesses both the flavoring properties of strawberries and the smell of this berry.
Through their research, scientists say they will be able to create a more sustainable strawberry flavor.
